Mama Geddes' French Bread Recipe

BEFORE YOU MAKE THIS: These will turn out best if you use french bread pans

Mix together in a bowl 2 Tbls Yeast 1/2 cup warm water 1 tsp sugar let yeast activate (about 10 minutes)

In large bowl, combine: 2 cups hot water (as hot as your tap will go) 3 Tbls sugar 1 Tbls salt 5 Tbls oil 3 cups flour

Pour in the yeast mixture and stir well. Then add 3 more cups of flour and stir.

Once mixed well, punch the mixture down with a wooden spoon several times. Leaving the spoon in the mixture, cover with a towel and let rest for 10 minutes. Do this 5 times (punching and resting for 10 mins each time).

Sprinkle a counter surface with flour. Put flour on your hands as well. Split the dough into four even parts. Roll out into sticks about 12 inches long.

Get a sharp knife and cut three or four diagonal slashes in the tops of the dough for decoration.

Set the over to preheat at 350 fahrenheit.

Now let the dough rise for 30 minutes.

While the dough rising, whisk up some egg whites and baste some of it on top of the loaves.

Bake for 20 minutes.
