Macaroni & Cheese
Cook 1½c macaroni until tender. Drain. Meanwhile, melt in a saucepan ¼c butter or margarine. Add 1 T. chopped onion. Cook slowly until tender but not browned. Blend in:
- ¼c flour
- ½tsp salt
- ¼tsp dry mustard
- few grains pepper Gradually stir in 2c. milk Cook over medium heat, stirring constantly, until thickened. Add 2c. shredded cheddar cheese. Stir until cheese is melted. Add cooked macaroni & blend well. Pour in a buttered 1½-2qt. casserole. Sprinkle with dried bread crumbs. Bake in a preheated 375°F oven for 30 mins. or until bubbly and browned.
