Sourdough oatmeal chocolate chip cookies
1/2 cup discard sourdough
1/2 cup softened butter
1 egg
1/2 cup dark brown sugar
1/2 cup coconut sugar (white sugar is fine)
2 1/4 cup all purpose flour
1 1/2 tsp kosher salt
1 tsp baking soda
1/2 tsp baking powder
2 tsp vanilla extract
16 oz chocolate chips
3/4 cup oats
Cream together the butter and sugar mixture
Mix dry ingredients in a different bowl
Add egg to butter and sugar, followed by sourdough discard and vanilla extract
Slowly mix in dry ingredients followed by chocolate chips and oats and don’t overwork the dough
Cover and rest in fridge for 30 min-overnight
Use an ice cream scoop and drop them on a parchment paper lined baking sheet
Bake @350 13-17 minutes
Flaky salt, transfer to wire rack when they’re cool enough to hold their shape
