Chad's Award Winning Guac

Chad's Guacamole

  • 4 Avocados
  • 2 Limes
  • 6 or more Cloves of Fresh Garlic, unpeeled
  • 1 Small Onion (red or white)
  • 2 Roma Tomatoes, diced
  • 3/4 cup Distilled White Vinegar
  • 1 tbsp Fresh Cilantro (optional), chopped
  • Salt
  • Pepper
  • Finishing Salt (chili and/or lime infused. Tajinworks, too!)
  1. Pour vinegar into a medium bowl (I usually just glug some in). Add cold water until the bowl is 3/4ths full. Finely chop the onion and add it to the bowl. Let it sit for 10-20 minutes
  2. Heat a skillet to medium-high and toast the unpeeled garlic cloves. (Do not oil the skillet!) Rotate the cloves every 3-5 minutes to blacken every side. The paper may begin to fall off, but try to keep it between the garlic and skillet, to prevent burning. Once the cloves feel soft, remove them and let cool. (starting with the smallest cloves).
  3. While waiting on the onions and garlic, mash the avocados in a large bowl until they are smooth, with some chunks remaining. Juice the limes directly into the avocado mash, adding enough to taste. Stir.
  4. Peel the garlic and chop finely. Use the side of your knife to press the chopped garlic down, continuing to chop and press until you have a paste. Stir in to the avocado mash, along with salt and pepper to taste.
  5. Strain the onions and stir in, along with the chopped tomatoes and cilantro.
  6. Sprinkle the finishing salt on top and enjoy!
