Chicken Tikka Masala

Chicken tikka masala

Time: 50 minutes

Serves: 4-6

Ingredients

  • 1 onion (white or yellow, I used 1/2 of a large white onion)
  • 2-inch piece of fresh ginger
  • 3 cloves of garlic
  • 1.5 lbs chicken meat
  • 1 Tbsp garam masala
  • 1/2 tsp turmeric
  • 1 tsp cumin
  • 2 tsp paprika
  • 1 tsp salt (x2)
  • 3 Tbsp cooking oil (I used olive)
  • 1 Tbsp tomato paste
  • 1 Tbsp brown sugar
  • 1 (28oz) can of crushed tomatoes
  • 3/4 cup heavy cream
  • 2-4 jalapenos to taste (optional)
  • fresh cilantro for garnish (optional)

Steps

  1. Peel and dice onion
  2. Grate enough ginger for 2 tsp
  3. Smash, peel, and mince garlic and set aside with onion and ginger
  4. Cut chicken into 1-inch chunks
  5. Mix chicken with garam masala, turmeric, cumin, paprika, and 1tsp salt until coated
  6. Heat oil on medium heat in a cooking pot
  7. Add onion, ginger, garlic, (and diced jalapeno if you like) and 1 tsp salt to oil and cook until onions are soft (7-9 min)
  8. Add tomato paste, brown sugar, and chicken and cook for 5 minutes stirring occasionally
  9. Add crushed tomatoes and mix well
  10. Simmer on low for 10 minutes
  11. Remove heat and stir in cream
  12. Sprinkle 2 Tbsp minced cilantro on top (optional)

No, the chicken cooks most of the way at step 8 and then stews for all of step 10. Be sure it comes back to a boil before the 10min and mix well.
