Recipe for Rosca de polvilho

Ingredients:
- 2 eggs
- 500g tapioca flower
- 1/2 cup vegetable oil (I use sunflower seed oil)
- 1/2 cup milk
- 1 cuc boiling water
- 1 teaspon salt
Preparing:
- Place half of the tapioca flower in a mixing bowl
- Add salt, eggs, oil and milk
- Mix it ultil homogeneous
- Add the boiling water and mix it in
- Add the remaining tapioca flower and mix it again (lots of mixing here)
- The dough should be very wet and soft, but not too runny
- Place the dough in a large baking tray (with high walls); see the video to get the idea
- Place it in the oven on high/broil
- After about 20min, or when it starts to look golden brown on the top, turn off the broiler
- Keep it in the oven for another 20min
- Take it out of the tray and place on a cooling rack
- Serve still warm;
- I like it on its own, some people love adding jam and/or nata (milk cream) to it.
