Sous vide miso salmon

Serve with rice and salad.

Miso glaze

  • 2 tablespoons mirin
  • 1 tablespoon miso paste
  • 2 teaspoons honey
  • 1 teaspoon grated peeled fresh ginger

Method

  • Sous-vide seasoned salmon at 40c for 30 minutes+
  • Combine miso glaze ingredients in a small frying pan
  • Add salmon when glaze is simmering for 1 minute, basting constantly
  • Remove from heat and place under hot grill until golden
