Made for Sunlight's bbq/picnic and loosely based on this recipe
Makes about 2 quarts of dip. Serve with pita chips or bagel chips. Feeds a ton of people (20–30).
2.5 (8oz) cream cheese, softened
3-4 tbsp mayonnaise
1/2 juiced lime or lemon
1 lb of salmon (deboned and deskinned)
1 bunch of scallions, chopped
4 cloves garlic, minced
Add as much as you like to taste:
Finely chopped fresh basil
Ground fresh pepper
Kosher salt
Paprika
Black sesame seeds
Sriracha (optional)
- Lightly season and grill salmon to your liking. Cool and separate into chunks.
- Combine cream cheese, mayonaise, lime juice, garlic, salt, pepper, paprika, and sesame seeds in a bowl and mix well until smooth and consistent.
- Sriracha is optional (add a few tablespoons for a little kick).
- Gently stir in salmon, scallions, and basil.
- Pop it in the fridge and serve chilled.
- Don't forget the chips. Or toast, burger, whatever.
