I figured out the cause of the discrepancy. I had a single 32GB memory stick in my NUC, so my original tests were running with single channel memory. I added another stick to give me dual channel memory and now my results are more in line with others who are running the same i5-1135G7 chip.
Apparently dual channel memory is a must. I have updated my original post with the dual-channel test results.
