Loretta's Crawfish Etouffee

"Crawfish can be substituted with shrimp."

Ingredients

  • 2 lbs cleaned Crawfish or Shrimp
  • 2 medium onions, chopped
  • 1 clove garlic
  • 2 stalks of celery
  • 1 can rotel tomatoes (mash tomato)
  • 1 can cream of onion soup
  • 1 tablespoon flour
  • cooking oil
  • Cooked Rice to serve with

Directions

  1. Make a Rue (brown flour in cooking oil), add onions, garlic, celery, saute.
  2. Add just the tomatoes (keep sauce). When tomatoes are mixed with sauce, add juice from tomato.
  3. Add soup, mix well, add water until sauce is not thick.
  4. Simmer and stir often.
  5. Add crawfish or shrimp.
  6. Serve with rice.
