"Crawfish can be substituted with shrimp."
- 2 lbs cleaned Crawfish or Shrimp
- 2 medium onions, chopped
- 1 clove garlic
- 2 stalks of celery
- 1 can rotel tomatoes (mash tomato)
- 1 can cream of onion soup
- 1 tablespoon flour
- cooking oil
- Cooked Rice to serve with
- Make a Rue (brown flour in cooking oil), add onions, garlic, celery, saute.
- Add just the tomatoes (keep sauce). When tomatoes are mixed with sauce, add juice from tomato.
- Add soup, mix well, add water until sauce is not thick.
- Simmer and stir often.
- Add crawfish or shrimp.
- Serve with rice.
