Banana pancakes:
1 banana, 2 eggs, vanilla, cinnamon Immersion blend (pull air into the batter to make them fluffier) and cook like pancakes. you can also add 1/2 a leftover sweet potato for thicker pancakes.
"meatza":
1 part hamburger 1 part pork sausage, press flat in an iron skillet, bake in the oven ~375. Drain off juice, add mozzarella cheese (I like to use grated hard mozzarella AND fresh soft mozzarella balls) and red sauce, cook some more. Add other pizza toppings.
zucchini pasta:
use a julienne peeler to peel zucchini into spaghetti strips (leave the skin on, stop peeling when you get to the seeds). put into a colander and salt evenly. let sit and drip dry while you make the sauce. pour hot spaghetti sauce over the cold pasta.
cauliflower rice:
blend cauliflower, then steam it. looks like rice but it's not full of arsenic
nut butter cupcakes:
1 part cashew butter (or almond or peanut, or a blend) 1 part cocoa powder something to sweeten it (honey? maple syrup?) maybe some salt maybe some baking powder
bake in cupcake tins until a fork comes out clean.
