Baked sweet potatoes

Baked sweet potatoes

  • 2 large sweet potatoes
  • 250g baby spinach
  • 10 chestnuts
  • 150g goats cheese
  • 2 cloves of garlic
  • Butter/oil
  • Salt/pepper

Serves 2

  1. Preheat oven to 200°C
  2. Dry fry the chestnuts. You can leave them in a hot pan while you do the next steps. Wait for them to start popping
  3. Slice the sweet potatoes into 5mm rounds
  4. Do the same with the cheese
  5. Dice the garlic and fry in oil; wilt the spinach in the same pan
  6. Shell the chestnuts when they're cool enough to touch
  7. Grease a small baking dish (like you'd use for lasagne) with butter
  8. Add sweet potatoes, spinach, cheese and chestnuts to the dish in layers, while seasoning
  9. Bake until the sweet potato is brown at the edges

Vegan version would just need cheese substitute and skip the butter :)
