1.1 Split starter in two a) Add 100g of flour and water to starter b) Add 50g of flour and water to starter base

After eight hours

1.2 To a) add the following and mix well

  • 270gm of water and 10gm of salt and mix well,
  • 400gm of flour
  • 20 - 30 gm of chia seeds

After between half and hour and 3 hours

1.3 With wet hands perform 6 to 8 folds of the dough

Cover and put in the fridge until morning

2.1

  • lightly flour proofing basket
  • spread chia seeds on a plate

2.1 With wet hands perform 4 to 5 folds of the dough

2.2 roll dough in the chia seeds & put it in the proofing basket and leave on the bench,

After 4 to 6 hours

2.3 set oven to 230C on standard bake with dutch oven inside it.

2.4 tip dough into dutch oven and into the oven and cook for 42 minutes

2.5 take out of the oven and leave on a wire rack to cool for at least 30 minutes
