180 ml bourbon whiskey
1 g ground black pepper
9 g salt
475 ml ketchup
65 g tomato paste
80 ml cider vinegar
30 ml liquid smoke flavoring
60 ml Worcestershire sauce
110 g packed brown sugar
2 ml hot pepper sauce, or to taste
Slaw
1 head green cabbage, shredded 2 carrots, grated
1 red onion, thinly sliced
2 green onions, chopped
1 red chile, sliced
1 1/2 cups mayonnaise
1/4 cup Creole mustard
1 tablespoon cider vinegar
1 lemon, juiced
Pinch sugar
1/2 teaspoon celery seed
Several dashes hot sauce
Kosher salt and freshly ground black pepper
