I usually bake 2 quiches at a time; one vegetarian, one with the bacon, so the recipe here is for that.
For two quiches:
- two round doughs
- some hazelnuts (maybe about 100g)
- 6 eggs
- two becher of crème fraîche
- 2 onions
- 2 cloves of garlic
- 200-300g mushrooms
- some vegetable (a zucchini, or an eggplant, or a leek...)
- optionally: a few cherry tomatoes
- optionally: diced bacon
- olive oil, salt, pepper
Steps:
- Preheat the oven (200C umluft/convection)
- Cut the onions, garlic, vegetable; fry them in a big pan on medium high with a bit of olive oil and salt+pepper
- Meanwhile, cut the hazelnuts
- Put the dough in a pie form, spread the hazelnuts on the dough
- Cook the dough 10 minutes
- Meanwhile, in a big bowl, mix 3 eggs and 1 becher of crème fraîche, salt and pepper
- Once the vegetables are cooked, turn off the heat; mix half of the vegetables in the bowl
- After the dough has cooked 10 minutes, add the bowl of dough mix
- Cook 10 minutes, then turn around 180 degrees, cook 10 minutes more (the quiche should start being golden brown at the end)
- When the quiche is done, put the 2nd half of the hazelnuts on the 2nd dough, and pre-cook the dough 10 minutes again
- Meanwhile, cook the diced bacon
- In the big bowl, mix again 3 eggs, 1 becher crème fraîche, salt and pepper, add bacon, the rest of the vegetables
- WHen the dough is pre-cooked, same thing: spread the bowl on the dough, and cook 10 + 10 minutes
