Quiche recipe

I usually bake 2 quiches at a time; one vegetarian, one with the bacon, so the recipe here is for that.

For two quiches:

Steps:

  • Preheat the oven (200C umluft/convection)
  • Cut the onions, garlic, vegetable; fry them in a big pan on medium high with a bit of olive oil and salt+pepper
  • Meanwhile, cut the hazelnuts
  • Put the dough in a pie form, spread the hazelnuts on the dough
  • Cook the dough 10 minutes
  • Meanwhile, in a big bowl, mix 3 eggs and 1 becher of crème fraîche, salt and pepper
  • Once the vegetables are cooked, turn off the heat; mix half of the vegetables in the bowl
  • After the dough has cooked 10 minutes, add the bowl of dough mix
  • Cook 10 minutes, then turn around 180 degrees, cook 10 minutes more (the quiche should start being golden brown at the end)
  • When the quiche is done, put the 2nd half of the hazelnuts on the 2nd dough, and pre-cook the dough 10 minutes again
  • Meanwhile, cook the diced bacon
  • In the big bowl, mix again 3 eggs, 1 becher crème fraîche, salt and pepper, add bacon, the rest of the vegetables
  • WHen the dough is pre-cooked, same thing: spread the bowl on the dough, and cook 10 + 10 minutes
