Best Berry Cobbler

  • Topping

    • 1 1/2 cups all-purpose flour
    • 1/2 cup firmly packed light brown sugar
    • 1 1/2 teaspoons double-acting baking powder
    • 3/4 teaspoon salt
    • 1 tablespoon cinnamon
    • 1 tsp cardamom
    • 1 stick (1/2 cup) cold unsalted butter, cut into bits
  • Filling

    • 3 tablespoons cornstarch
    • 1/4 cup granulated sugar
    • 6 cups whole blueberries or chopped strawberries
    • 2 tablespoons fresh lemon juice
  1. Preheat oven to 400˚F
  2. Generously butter 10-inch (6-cup) deep-dish pie plate
  3. Sift cornstarch
  4. In a large bowl stir together the cornstarch and the granulated sugar. Add the lemon juice and berries
  5. Toss the mixture until combined and transfer to pie plate
  6. Combine the flour, brown sugar, baking powder, salt, cinnamon, cardamom, and butter. Blend the mixture until it resembles coarse meal
  7. Add 1/4 cup plus 2 tablespoons boiling water and fold the mixture until it forms a dough
  8. Drop chunks of the dough over the berry mixture
  9. Bake the cobbler on a baking sheet in the middle of oven for 30 to 40 minutes, or until the topping is golden
