Recipe comes from Alton Brown's "I'm Just Here for the Food", although this
is coming from memory as I don't have the book in front of me:
Roasted Tomatoes
Ingredients:
* 20 ripe tomatoes, cut in half crosswise (perpendicular to stem)
* about 1/2 cup extra virgin olive oil
* about 3 tablespoons of sugar
* a few tablespoons of fresh, minced herbs including sage, rosemary and thyme
* kosher salt
* freshly ground black pepper
Preheat oven to 170 degrees
Place tomatoes cut-side-up on a couple of half-sheet baking pans. Drizzle with
olive oil, then sprinkle the sugar evenly over the tops. Top each tomato with
a pinch of the herb mixture, then toss on some salt and pepper.
Place tomatoes in oven and roast for about 10 hours.
They can be stored in a plastic bag in the refrigerator for about a month, or
for a couple centuries in the freezer.
