Recipe comes from Alton Brown's "I'm Just Here for the Food", although this | |
is coming from memory as I don't have the book in front of me: | |
Roasted Tomatoes | |
Ingredients: | |
* 20 ripe tomatoes, cut in half crosswise (perpendicular to stem) | |
* about 1/2 cup extra virgin olive oil | |
* about 3 tablespoons of sugar | |
* a few tablespoons of fresh, minced herbs including sage, rosemary and thyme | |
* kosher salt | |
* freshly ground black pepper | |
Preheat oven to 170 degrees | |
Place tomatoes cut-side-up on a couple of half-sheet baking pans. Drizzle with | |
olive oil, then sprinkle the sugar evenly over the tops. Top each tomato with | |
a pinch of the herb mixture, then toss on some salt and pepper. | |
Place tomatoes in oven and roast for about 10 hours. | |
They can be stored in a plastic bag in the refrigerator for about a month, or | |
for a couple centuries in the freezer. |
