- 1/2 to 1 can of chickpeas
- 1/2 to 2 can of lentils
- 1 avocado
- green onions
- 1 or 2 cloves of garlic... if you can handle raw garlic ;)
- a bit of horse radish
- pea sprouts or other little greens
- curry powder, chipotle pepper powder (or whatever other spices you like)
- lemon juice (optional)
- salt and pepper
- bread (for sandwiches. I used pumpernickle)
- Blend the chickpeas, and lentils in a food processor. I kept the mixture pretty coarse so there was still a nice texture to it.
- Mash up avocado with a spoon. Add a bit of horse radish if you like it spicy. Mix into the chickpeas/lentils.
- Season with a bit of curry power, chipotle pepper powder, salt, pepper, and lemon juice.
- Add pea sprouts/greens.
- Spread on top of some toasted bread and eat! Yum.
- If the mixture isn't creamy enough, you could add a bit of [vegan] mayo or more avocado. I didn't find it was necessary.
- I didn't have any lying around, but herbs like parsely and dill would probably taste good mixed in
