Tortilla with chicken, cheese and veggies

Ingredients for 5 portions

  • Chicken breast 800g
  • Cheese 250g
  • Tortilla 625g (10pc)
  • Canned corn 250g
  • Bell peppers 250g
  • Onions 125g

Macros: 60p/25f/70c/778kcal

How-to:

  • cut and fry chicken breast
  • chop veggies
  • portion out cheese and all other ingredients
  • roll everything into tortilla
  • store 2 tortillas per container
  • heat up on a dry pan and very low flame for 2-3 minutes a side or until golden brown

You can sub chicken for a ham or any other protein source.

Curry with coconut milk, rice noodles and chicken

Ingredients for 5 portions

  • Chicken breast 550g
  • Rice noodles 375g
  • Coconut milk 500g
  • Curry paste 50g

Macros: 33p/20f/66c/588kcal

How-to:

  • cover rice noodles with boiling water for a few minutes and drain
  • cut and fry chicken breast
  • take it out of the pan
  • pour coconut milk into very same pan
  • bring to a simmer
  • melt the curry paste
  • put the chicken back into the pan and let it simmer for 5-10 minutes, making sure to add some water if necessary
  • add salt and pepper to taste
  • throw noodles into the pan and mix very well

Sub green curry paste for a red one to mix it up. Don't try to portion out noodles and then add sauce, as it won't taste the same. Noodles won't absorb enough flavour.

Italian pesto with a turkey, grana padano and bacon

Ingredients for 5 portions

  • Turkey breast 400g
  • Bacon 180g
  • Grana padano 150g
  • Pasta 400g
  • Pesto 100g

Macros: 44p/26f/58c/652kcal

How-to:

  • cook and drain pasta
  • put it back into a large pot
  • cut and fry bacon
  • add turkey breast and fry until cooked
  • add fried meat, pesto and grated cheese to the pot
  • add salt and pepper to taste (bacon and cheese are already salty so be careful!)
  • mix well
  • portion out into containers

Same as with the curry. Sub green pesto for a red one to mix it up. Don't try to portion out noodles and then add sauce, as it won't taste the same. Noodles won't absorb enough flavour.

Mushroom risotto with bacon and chicken

Ingredients for 5 portions

  • Chicken breast 500g
  • Bacon 225g
  • Rice 300g
  • Chicken/vegetable stock 1-2 cubes
  • Mushrooms 300g
  • Onions 200g
  • Grana padano 100g

How-to:

Overnight oats with berries, peanut butter and cottage cheese

Ingredients for 5 portions

  • Peanut butter 250g
  • Berries mix 750g
  • Oats 330g
  • Cottage cheese (5% fat) 1250g

How-to:

  • all steps are done in a container that you'll use to store the portion
  • boil half cup of water
  • melt peanut butter and some stevia/sweetener
  • add oats and mix
  • wait for ~5 minutes for them to absorb some water
  • add cottage cheese and berries
  • close containers and put them in the fridge
  • in the morning just take out, mix and enjoy

Don't do more than 2-3 portions, as it won't last a whole week. You can use any fruits, not only berries and/or sub peanut butter for any nuts/seeds.

Beef stew with veggies overload

Ingredients for 5 portions

  • Beef (95% lean in my case) 665g
  • Butter 100g
  • Sour cream (22% fat) 100g
  • Beef stock 1-2 cubes
  • Tomatoe paste 80g
  • Potatoes 1250g
  • Bell peppers 500g
  • Onions 500g
  • Carrots 250g
  • Persley 100g
  • Garlic to taste

Macros: 40p/28f/71c/682kcal

How-to:

  • chop everything you bought (it will take some time...)
  • melt butter in a very large pot
  • fry cubed beef
  • add onion and garlic and let it fry for few minutes with beef
  • add tomatoe paste and sweat it for a minutes in a pan
  • add potatoes, bell peppers, carrots and parsley to the pot
  • add beef stock melted in enough water to cover all the veggies
  • add salt and pepper to taste
  • add few bay leafs and few allspice balls
  • bring everything to a boil, lower the flame and let it simmer for... 1-2 hours or until everything is soft (the longer you'll simmer, the more tender beef will be)
  • add some of the hot liquid to sour cream and mix it very well, repeat few times (we are doing this so that sour cream won't separate from the sauce)
  • pour it into the pot and stiiiir everything
  • take out bay leafs and allspice
  • portion out into containers
