Recipes I made up for healthier and (relatively) cheaper eating.

Recipes

This is a collection of simple recipes I have created for myself.

Sudorrito

Ingredients

Qty Item
2 Bell Pepper
1 Cucumber
1 Bundle of Kale
1 Bundle of Spinach
1 Bundle of Green Onion
3 Avocado
1 8oz Block of Feta Cheese
1 Small Box of Grape Tomatoes
1 Athens Original Hummus
1 Bottle of Spicy Brown Mustard
1 8oz Bag of Salad Bacon Bits
1 Package of 12" Flour Tortillas

Optional:

Qty Item
1 Large Ziploc Bag
1 Small Ziploc Bag

Instructions

  1. Chop all of the following up and mix together.
    • Bell Pepper
    • Cucumber
    • Kale
    • Spinach
    • Green Onion
  2. Place chopped and mixed veggies into large ziploc bag.
  3. Put one tortilla on a dinner plate.
  4. Dab desired quantities of the following in order listed:
    • Hummus
    • Spicy Brown Mustard
    • Feta Cheese (crumble it by hand)
    • Bacon Bits
    • Grape Tomatoes
  5. Cut one avocado in half, store one half in small ziploc bag.
  6. Slice avocado and place under or next to grape tomatoes.
  7. Spread chopped veggie mix of desired quantity over tortilla.
  8. Fold and enjoy.

Notes

  • It took me 30 minutes to prepare all of this stuff on the first day. Since this sort of work isn't needed every day, I'm guessing the next time I make this burrito it'll take about 5 minutes.
  • You should have enough stuff to last you a week, assuming you eat one of these each day for lunch or dinner.
  • The order in which you do any of the instructions is entirely up to you. The order I put them in is just for convenience. You may just end up mixing absolutely everything (minus the tortiall) together and just scoop from that as needed. Hell, I'll probably do that.
