#Tofu Bolognese - Yummy, vegan bolognese

##Ingredients

Ingredient Amount
Tofu, natural 80 g
Soy sauce, dark 2 tablespoons
Water 1 tablespoon
Lemon juice 1 teaspoon
Olive oil 1 tablespoon
Shallot diced ½ a piece
Tomatoes, sieved 125 g
Vegetable broth
Paprika powder, sweet
Parsley
Optional: Mixed Vegetables 100 g

##Preparation

  1. Crumble tofu (mash with a fork) and mix with the soy sauce, water, and lemon juice well and let them go for min. 1h.

  2. In a small saucepan, heat the oil and fry the onion. Add the tofu and optionally approx. 100g of diced vegetables (peppers, mushrooms, carrots, etc.) Fry over medium heat for a few minutes.

  3. Add the sieved tomatoes and the vegetable broth and parsley. Simmer the whole bolognese for about another 3-5 minutes.

Serve with whole wheat pasta.

##Working time About 20 minutes. Resting time: approx. 1 hour
