- 1/2 cup cashews
- 1/2 teaspoon apple cider vinegar
- 1 Tbsp white sugar
- Soak cashews overnight; or, if pressed for time, boil cashews on the stovetop or in the microwave until completely soft
- Drain cashews
- Combine cashews + vinegar + sugar in a food processor or blender
- Mixture should be thick but mostly smooth; add scant amounts of water while processing if necessary
- Optional: cover mixture and let it sit on the counter for 24 hours to develop a deeper tang
- Refrigerate to store
