dairy-free marscapone

Ingredients

  • 1/2 cup cashews
  • 1/2 teaspoon apple cider vinegar
  • 1 Tbsp white sugar
  1. Soak cashews overnight; or, if pressed for time, boil cashews on the stovetop or in the microwave until completely soft
  2. Drain cashews
  3. Combine cashews + vinegar + sugar in a food processor or blender
  4. Mixture should be thick but mostly smooth; add scant amounts of water while processing if necessary
  5. Optional: cover mixture and let it sit on the counter for 24 hours to develop a deeper tang
  6. Refrigerate to store
