toasted marshmallow ice cream
6oz mini marshmallows
425g milk
325g cream
75g sugar
50g glucose
3g stabilizer
100g yolks
Spread marshmallows on a silpad on a baking sheet, broil for 3-4 minutes keeping a close eye on them so they do not burn.
Once toasted, mix up into a puddle of molten marshmallow and toast again.

2 sticks (3 - 4 inches long) cinnamon.
1 stick cinnamon grated finely.
200g | Mascrapone
400g | Cream
200g | yolk
450g | Milk + 100g extra (loss to beans)
225g | Sugar
75g | Glucose
40g / 3tbsp | Rum
4tbsp Coffee beans
Soak milk in coffee beans. Will lose 100 grams or so, so add more milk than you need.
