cookbook

Basic Boiled and Steamed Foods

White Rice

x cups rice
2x cups water
x tsp salt
1/2x-1x tbsp olive oil or other oil (Optional)
1. Soak rice in water for 30 minutes
2. Add salt and bring to a boil.
3. Put lid on, reduce heat to low, and steam for 15 minutes.

Beans

1.5x quarts water
xlb (roughly 3x cups) dry beans (previously soaked overnight) (including pinto, black, great northern, many others... excluding kidney)
1. Put beans and water in pan. No salt. Heat to rolling boil.
2. Let beans boil fiercely for 10+ minutes.
3. Cover beans, then set heat to low and simmer for 1.5 hours.
1.5-2x quarts, the equivalent of about 3.5-4x cans.

Pasta

x/4 lb pasta
x quarts water
x tbsp salt
1. Bring water to a boil, add salt
2. Add pasta
3. Cook for 10-15 minutes until al dente, drain

Hard Boiled Eggs

6 eggs
3 cups of water
Cover 6 eggs with water
Heat water to rolling boil (15 mins)
Lower to low and cover (12 mins)
Drain and douse in cold water

Rice and Pasta dishes

Lexi’s Fried Rice

Ingredients

Precooked long-grain rice, preferably jasmine rice
Various vegetables of choice [good choices include onions, peas, carrots, corn]
Vegetable oil
1-2 eggs
Soy sauce

Instructions

1. Using a wok or large pan cook some vegetables of your choice in a vegetable oil
2. Once the vegetables are cooked push them to one side of the pan and cook an egg or two in the empty half. Slowly break apart the egg into curds as it cooks. 
3. Once that's done or if you don't want eggs throw the cooked rice in and mix it all up.
4. Slowly mix in soy sauce until all the rice is a nice light brown color, then cook and stir it for a few minutes. Add soy sauce as needed, you want a good amount but not too much.

Stir Fried Tomato & Eggs

x eggs
2x plum tomatoes
x tbsp vegetable oil
Pinch of salt and black pepper
Slice tomato into thin slices. Remove core.
Break eggs in a bowl and whisk until mixed. Add a pinch of salt and black pepper.

1. Heat oil and scramble eggs.
2. Push eggs to side of pan, pour a little more oil in, then tomato slices
3. Fry until soft and well mixed
4. Serve with white rice!

Rice with Broccoli and Garlic

1 cup of dry rice
1 cup of chopped brocco
1.5-2 tbsp of minced garlic
1 tbsp of olive oil
1. Add rice and brocco to pot, cook as directed for white rice
2. Once cooked, add minced garlic and olive oil, mix well, serve

Aglio e Olio

Chopped parlsey
Minced garlic

2 tbsp EVOO
Fresh ground black pepper
1. Heat olive oil.
2. Gently fry ingredients briefly
Enough sauce for 1lb pasta.

Variations: tuna, shrimp, beans, egg noodles

Marinara

prep:
1 medium onion, minced/diced very small
3 large cloves garlic, minced

28oz can crushed tomatoes
1/4 cup EVOO
1 tbsp Italian seasoning
1 tsp salt
Sprinkle of black pepper
1. Heat oil, fry spices, garlic, and onions until aromatic
2. Pour crushed tomato into pan, heat to a boil.
3. Cover and simmer 1-2 hours, occasionally stirring.
3 cups of finished sauce, enough for 2lb of pasta.

Japanese curry sauce

prep:
2 diced onions
1 medium sliced carrot
1 large potato, peeled and cut into chunks
(optional) one lb of some kind of meat or meat substitute

2 1/4 cups water
2 tbsp veg oil
Curry roux block
1. Heat oil, then fry vegetables until softened. Onions should be somewhat translucent.
2. Add 2 1/4 cups water and bring to a rolling boil.
3. Cover and simmer 45 minutes.
4. Break up curry block and put it in, stir for 5 minutes.
Quart of curry sauce

Omelettes

Good combinations: kale, mushroom, onion (two eggs, w olive oil, black pepper, salt, crushed red pepper)

Oven Bagels

Scales very well for a crowd, since you can put a virtually unbounded amount of bagels concurrently in the oven once it is preheated. Tongs recommended to insert and remove bagels. Assemble toppings/sandwich fillings on the side while the bagels are cooking so will have them on hand when they are ready.

Bagels

Whatever toppings/fillings you want to use

  1. Preheat oven to 375 degrees F
  2. Put bagels in oven (directly on cooking grate, not on baking sheet!) and cook for 6-7 minutes. Do NOT slice the bagel in half prior to putting it in. The bagel must remain whole.
  3. Remove bagel, then slice it in half. Allow it to steam/release heat for a minute or two if spreading cream cheese or peanut butter on top.
  4. Generously apply toppings to bagel, then serve.

Various recommended ways to prepare:

  • With cream cheese
  • With cream cheese + minced surimi, imitation crab, or imitation lobster
  • With peanut butter [plain bagels]
  • As a sandwich with egg and american cheese slice, optional tomato slice
  • As a sandwich with white fish (I like haddock) and american cheese slice, optional tomato slice

Fried Peanut Butter and Banana Sandwich With large frying pans, you should be able to cook at least two of these concurrently per burner.

1 tbsp olive oil 2 slices of split wheat bread 1/3 banana, thinly sliced Peanut butter

  1. Slice banana thinly
  2. Coat upper side of both slices of bread with peanut butter
  3. Cover one slice with banana slices
  4. Put oil in frying pan, heat
  5. Put one slice of bread into the pan, and then rapidly remove it
  6. Put that slice of bread oil side up onto the sandwich, then put the dry slice in the pan
  7. Cook until both sides are toasted
  8. Optional: Sprinkle sandwich with sugar and cinnamon after
  9. Optionally, cut sandwich

White fish sandwiches

Sandwich buns White fish (eg haddock) Fresh tomato Leaf lettuce Tartar sauce Pickle spears

  1. Preheat oven to 425 degrees
  2. Cook fish patties
  3. Assemble sandwich (fish, lettuce, tomato, tartar sauce)
  4. Serve with sides and pickles

Balsamic Bread Dip

1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 large garlic cloves worth of garlic
1/4 tsp salt
1. Stir ingredients together
2. Let sit for 10 minutes
3. Serve with fresh bread such as a baguette

Balsamic Vinaigrette

1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 teaspoon honey
1 teaspoon dijon mustard
1 scallion, minced
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper
1. Mix ingredients

Leafy Green Salad

Various fresh veggies, such as:
 * Leaf lettuce * Chopped tomatoes * Chopped green peppers * Sliced cucumbers, or alternatively zucchinis or other summer squash * Small amounts of diced onions, especially sweet onions * Grated raw carrot AND a dressing, such as: * Tartar sauce * A vinaigrette, maybe the one listed in this recipe book * Ranch AND, if you feel like being fancy, other toppings, like: * Walnuts * Crumbly cheese

  1. Assemble all ingredients you want to use
  2. Put them in a large bowl
  3. Thoroughly mix
  4. Serve salad in plate with dressing on top

Cinnamon Spiced Oats

1 cup water
1/2 cup rolled quick oats
1 tablespoons sugar
2 teaspoon cinnamon
1/8 teaspoon salt
1. Mix all dry ingredients.
2. If using microwave: Add cold water, stir, and microwave for 1m 20s. If using pre-boiled water: pour boiling water in bowl and wait 5 minutes. Stir.
Pre-boiling water is more effective for serving to multiple people at once.

Tartar Tomato Sandwich

Two slices of bread Tartar sauce Tomato slices

  1. Squirt a good amount of tartar sauce on both slices of bread
  2. Cover one slice of bread with sliced tomato
  3. Close sandwich
  4. Optional: Cut sandwich

Simple Garlic Grits **

1/2 cup grits Garlic powder 1 teaspoon salt 2 cups water

  1. Mix grits and water in microwaveable container
  2. Microwave 3 min 30 secs
  3. Add salt
  4. Sprinkle dusting of garlic powder on top

BEANS, TEX-MEX AND STUFF

Refried Beans

1.75-2 cups precooked pinto beans (See: Basic Pinto Beans recipe)
2 tablespoons olive oil
Ground cumin
Chili powder
Black pepper
Salt
1. Put olive oil in pan and bring to low-medium heat
3. Pour pinto beans into pan
4. Sprinkle generous amounts of cumin, chili powder, black pepper, and salt on top of the beans,
5. Stir beans as they cook, and mash
6. When well cooked through and of the right composition, they are done. Est 5 mins

Cheese Quesadilla

1/4 cup shredded cheese 1 flour tortilla Scallion/welsh onion 1 tablespoon olive oil Optional: tomato slices

  1. Put olive oil in pan and cook to low-medium heat
  2. Lay out tortilla and cover one half with the shredded cheese, leaving a small margin on the edge with no cheese
  3. Thinly slice scallion and sprinkle slices over quesadilla half
  4. Optional: Add tomato slices on top of cheese
  5. Pull empty half of tortilla over the covered half
  6. Place in the oiled pan
  7. Flip over multiple times as it cooks so it cooks evenly, until lightly browned on both sides

Basic Bean & Cheese Quesadilla

1/4 cup shredded cheese 1 flour tortilla 1/4 cup refried beans

  1. Put olive oil in pan and cook to low-medium heat
  2. Lay out tortilla and cover one half with the shredded cheese, leaving a small margin on the edge with no cheese
  3. Spread very thin layer of refried beans on top
  4. Pull empty half of tortilla over the covered half
  5. Place in the oiled pan
  6. Flip over multiple times as it cooks so it cooks evenly, until lightly browned on both sides

BAKING

Cornbread

1 cup wheat flour
1 cup cornmeal
1 cup water
1/4 cup vegetable oil
1/4 cup sugar
1 egg
3 tsp baking powder
1 teaspoon salt
1. Preheat oven to 425 degrees
2. Mix together dry ingredients in a bowl
3. Mix in eggs, water, and vegetable oil
4. Pour into greased 8x8 pan
5. Bake for 18 minutes
6. Remove from oven and let cool

DRINKS

Lemonade

1.5 quarts water
1 cup lemon juice
3/4 cup granulated sugar

Mix and shake well.

Sweet Coffee

  1. Grind 2 tablespoons of coffee beans
  2. Place coffee grounds in pot
  3. Add 12oz water
  4. Make coffee
  5. Put 3 teaspoons sugar in mug
  6. Pour coffee in mug
  7. Stir

Raspberry Tea

1 cup of mashed or blended raspberry 6 1/2 cups of water 1/2 cup of sugar 6-8 black tea bags

  1. Heat water to a boil
  2. Add sugar, mix vigorously
  3. Let 5 teabags sit in mixture for 3 minutes
  4. Remove teabags
  5. Add raspberries, stir
  6. Cool
  7. Put in fridge until cold
