1. Cook rice and keep in fridge (at least until it cooks down significantly)
2. Cook bacon or luncheon meat or meat of choice with some chopped garlic (add as per taste req.s)
3. Add fresh veggies like french bean, diced carrots and etc (we find fresh vege much nicer than the frozen peas, etc... )
3.5 Get some preserved black olive shredded strips from an asian grocery. It's in the preserved veges section usually. This really brings out the flavour of the dish. will take photo soon
4. Add cold rice.
5. Stir until midway warm then add eggs to rice, stir vigourously so the egg is coated everywhere. (a non stick wok is very helpful)
6. For an extra kick, add sambal chilli.
7. Serve with garnishes like spring onion, coriander and fried shallots. Sliced thai chillis are awesome too.
alternatives: you may add diced fried fish balls (it's the brown coloured ones) for variety. If you like salted fish, you could add it too but it tends to be an acquired taste.
Sausages could also be used as an alternative meat. It's really what you like to put in.
