This came with issues:
# Get the UUID
sudo lsblk -o UUID,NAME,FSTYPE,SIZE,MOUNTPOINT,LABEL,MODEL

Eventually found out my UUID is: 6318-E837
# Edit fstab
sudo nano /etc/fstab
# Add the following line
UUID=6318-E837 /mnt/usb exfat-fuse defaults 0 0
