The Valley of Taco is a casserole that uses rice as a staple. Here is the basic recipe. You can add beans if you like. I haven't tried that, but it's probably good.
Ingredients:
-2 cups rice
-3 tablespoons taco seasoning (1 package)
-4 carrots
-2 onions
-1 green pepper
-1/2 head of brocolli
-mushrooms!
-jar of pickled jalapeno slices
-3 tablespoons canned chipotle (amp this up if you like the spice)
-1 large can diced or whole tomatoes
-1 tomato paste
-cheese
-olives (green or black, what you like)
-some kind of fake or real meat if you want
To make:
1. Cook up the rice
2. Chop up vegetables
3. Fry the vegetables/mushrooms
4. After you've cooked these guys, wait for everything to cool off
5. Put the rice and vegetables/mushrooms in a sufficiently large casserole dish
6. Pour the tomatoes and tomato paste into the mess
7. Add the meat/fake meat if you want
8. Put the taco seasoning all over
9. Drizzle the chipotle on things
10. Mix it up with your hands! You will feel alive
11. Add olives and jalapenos to the surface
12. Grate a bunch of cheese and sprinkle on top to give a covering over the casserole surface
13. Cook the slop up at 350 degrees for 60 minutes
Serve with salsa, sour cream.
