Alfred.app - Quick App Loader and much more.
Cinch.app - Allows for fullscreen resizing
Fraise.app - Simple text editor, not great but nothing better.
Smultron.app - Earlier version of Fraise.
HTTPScoop.app - HTTP Debugger
Navicat for MySQL.app - MySQL tool
PhpStorm - The Absolutely Best PHP Development Tool. Of course.
Skitch.app - Absolutely Indispensible Screen Share tool
Transmit.app - FTP app.
VirtualHostX.app - Manages Mac hosts & Apache vhosts 

Almost Must Have

AppShelf.app - Inventory of Applications and License Keys
Growl.app - Adds notices to many apps.
HTTP Client.app - Allows you to GET & POST low-level HTTP 

Nice to Have
------------
Acorn.app - Image Editor
Adium.app - Chat (I don't use much, but many others do.)
Arq.app - Backup Tool
BetterZip.app - Zip Tool
Paparazzi!.app - Cool scriptable screen capture tool.
Qumana.app - Blog Post Editor
Things.app - ToDo App
Videobox.app - Captures and downloads videos.
