Dead-easy spicy strawberry curry

Sambal oelek is a spicy chili pepper sauce; Huy Fong Foods's sambal oelek is pretty easy to find in grocery stores. Don't try to substitute other hot sauces for it.

Ingredients

  • 2-3 heaping teaspoons sambal oelek
  • 3 large strawberries, chopped finely
  • 1 tbsp cumin
  • 1 tsp ground coriander
  • salt and pepper, to taste
  • 1 sweet potato, chopped in 1" cubes
  • 100g tofu, chopped in small cubes

Directions

Heat the sambal oelek in a saucepan at medium heat, and add the strawberries. Stir until well-mixed. When warm, add the spices and 100mL of water, and stir until the spices are dissolved. Add the sweet potato and tofu and stir well, then wait until it starts to simmer. Cover and reduce to low, leaving the curry to cook for at least 20 minutes. Curry is done when the potatos are soft enough to cut with a spoon. Serve over rice.

Serves two.
