  • 2 cups water
  • 1 cup caster sugar (to taste)
  • 1/2 teaspoon powdered cinnamon
  • 1/2 teaspoon powdered ginger
  • 1 clove
  • splash of lime juice
  • sliced peppers (depending on desired spicyness, either remove or save the seeds)

Preheat oven to 90 *C.

Mix all the ingredients but peppers in a saucepan, bring to boil. Throw in the peppers. Poach for 20 minutes. Drain, optionally saving the poaching liquid for further iterations (it'll absorb lots of spicyness), cocktails, sauces, etc.

Scatter on a parchment paper in the oven. Bake for an hour, or until sufficiently dried out.

  • Add whisky (probably an easy-going one, Auchentoshan comes to mind) to the poaching liquid for pairing with chocolate deserts (not tried out yet)
