Chana Masala

Prep time: 15 mins Cooking time: 40-45 mins Serves: 4

Ingredients:

  • 2 Onions - sliced finely
  • 4 cloves of garlic - chopped finely (or crushed)
  • 1 Tbs oil (I use olive)
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 Tbs ground cumin
  • 1 Tbs ground coriander
  • 2 x 14oz cans of chickpeas, drained
  • 1 x 14oz can of diced tomatoes, undrained
  • 1 tsp garam masala

Instructions:

  1. heat oil in a medium pan. Add onion & garlic. Cook over medium heat until soft.
  2. add the chili powder, salt, turmeric, paprika, cumin & coriander. (you might need to add some more oil so that you can get kind of a dry paste). stir over heat for 1 mins.
  3. add chickpeas & undrained tomatoes. stir until combined. simmer, covered, over low heat for about 10-20 mins, stirring occasionally. stir in garam masala. Simmer, covered, for another 10 mins.
