Sweet n Spicy pulled pork

We had some extra pork loin, cooked in a crock pot, then pulled.

I created this sauce that I let some of it simmer in. Delicious.

  • 1 stick celery, sliced
  • 1 carrot, sliced
  • one half scallion, sliced
  • one quarter white onion, sliced
  • one half serrano pepper, sliced
  • 2-3 tablespoons, strained greek yogurt
  • 2 teaspoons light sour cream
  • one half red bell pepper, sliced
  • 1 roma tomato, sliced
  • 5 grape tomatoes, sliced
  • 5 cloves garlic, sliced
  • 1-2 handfuls of pulled pork depending on desired wetness
  • one half mango, diced

Heat sauce pan with peanut oil. Sautee carrot, celery, scallion and garlic. Leave a little scallion and garlic raw and set aside. Reduce heat, wet with a little wine or beer. I used a few ounces of a golden lager. Add in tomatoes, bell pepper and serranos and cook until a sauce begins to form. Stir often. Season with black pepper and chili powder. As tomatoes have softened, add in mango and let it cook for a couple of minutes or until the mango is soft. Then, add in yogurt and continue stirring. Add sour cream and stir more. Cook this for a fow minutes until it is more incorporated. Add the remaining garlic/scallion bits. Then add half the pork, stir a couple of minutes and add the remainder. Keeping the heat low, let this incorporate and cook until it looks ready to eat. Season to taste.
