Beer-battered tilapia!
Ingredients:
- 5-6 tilapia fillets, cut in half lengthwise
- 1 cup flour, plus more for dredging
- 2 tsp salt (maybe a bit more)
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp black pepper
- 1 tbsp paprika
- dash cayenne
- 1 bottle of beer
- oil for deep frying
Directions:
1. Mix flour and spices together. Stir in beer until the batter is a bit thinner
than pancake batter. Don't get it perfectly smooth: the lumps will thicken
the crust.
2. Heat a few inches of oil in either a fryer or deep pot to about 325° F.
3. For each strip of fish: pat dry, dredge in plain flour, dip in batter, and
place in fryer. While it fries dribble more batter on it and flip it every
20 seconds or so. Remove after 3-5 minutes.
I used peanut oil, which was a bit pricy but I think had a better flavor, or at
least less of a weird smell than vegetable or canola oil does. For the beer, I
used a Scuttlebutt Amber, but pretty much any beer should be good.
Serve with fries and tarter sauce, naturally. Or malt vinegar.
