You will need:

  • As much brisket as you want (2 kilos should be enough for one meal for 3 to 4 people).
  • Olive oil
  • 1 sprig of rosemary
  • Garlic
  • Soy sauce
  • Pepper
  • 1 onion
  • 1 bay leaf
  • 1 dutch oven.

I buy brisket from the Queen Vic Markets for $7 a kilo. Your local butcher should have it. It shouldn't be an expensive cut of meat, as it's very tough and takes a lot of cooking to become tender. It is becoming fashionable to buy it. The price has gone up over the last few years (it used to $5 a kilo, I sometimes see it for $10).

Step 1. High heat the brisket to burn it.

Lightly coat the dutch oven with olive oil. Put in the brisket. Add 1 clove of garlic. Add salt and pepper to taste. Add the bay leaf. I also use chilli.

Cut up the onion into segments (whatever size, doesnt matter).

Put the dutch oven under the highest heat possible on the stove top (I gas flame it on 10). Add the brisket. Throw some soy sauce over it.

Let it cook on both sides until it is slightly burnt. This adds flavour and is important.

Step 2

Once it has some brown or black on both sides, turn off the high heat. Add the rosemary and the bay leaf.

Put the lid on the dutch oven. Put the dutch oven in the oven at 100 degrees Celsius for at least 5 hours, probably longer.

Step 3

After five hours (or more), test the meat. Push a knife into it. It should fall apart very easily. If it doesn't continue to slow cook it until it does.

When you are happy with the tenderness of the meat, heat up the main oven to 200 degrees Celsius and let the meat cook for another 20 minutes. Then it will be ready to rest and serve.
