The best damn chili con carne

Chili con carne

Serves a whole lotta people.

Ingredients

Note: We're talking heaped spoons here, none of that weak shit

  • Meats
    • 2 kg ground meat half/half maybe beef idk
    • 1L of beef stock
  • Fond
    • 1/2 chorizo sausage
    • 4 large onions (and I mean huge)
    • 6 garlic cloves
    • 100g tomato paste
    • 1 whole pilsner beer dark beer would be nice
  • Vegables
    • 1.3kg tomato stuff (chopped/pureed)
    • 1 kg bell pepper stuff (frozen)
    • 960g canned kidney beans
    • 600g canned maize
  • Spices n herbs
    • 4 dried bird's eye chilies
    • 2 tsp each of hot and noble sweet paprika powder
    • 4 tsp oregano
    • 2 tsp cumin
    • 2 tsp garam masala if present
    • 3-4 bay leaves
  • Others
    • 12g+ dark chocolate
    • 300ml of strong coffee

Procedure

  • In a huge stainless steel pot,
    • Brown the ground meat in batches
      • Meanwhile chop up the other stuff
      • Also heat up about 1L of beef stock in another pot
      • Put the meat aside
    • Sautee the chopped onions and chorizo and the pressed garlic, don't forget to brown the tomato paste
    • Once a decent fond has formed, deglaze with the beer
  • Add pretty much everything
    • Add back the ground meat
    • Add tomato stuff, bell peppers, beans and maize (drained)
    • Bring that beauty to a nice boil
  • You better season that shit well
    • Chop up the chili real fine and add
    • Add the spices
    • Throw in the chocolate bar
    • Add coffee and beef stock until consistency looks promising
  • Let simmer for figurative ages
  • Adjust saltiness and consistency with salt and beefstock
  • Enjoy like there's no tomorrow

best recipe ever ! I will leave off the onion as I hate that shit; chocolate? hmmm, sounds weird but I'll give it a try...
