The ultimate oven roasted potatoes

Rosemary Roast Potatoes with Onions and Ham

Ingredients

  • 2 kg potatoes
  • 3 medium-sized onions
  • 2 cloves of garlic
  • 200g diced ham
  • 1 cup of olive/vegetable oil (I like equal parts)
  • 1 tbsp oregano
  • 1 tbsp estragon
  • 2 tbsp rosemary
  • 2 tsp sweet paprika
  • 2 tsp smoked paprika
  • 3 tsp salt
  • 1 tbsp sugar

Procedure

  • Potatoes
    • Cut potatoes into bite-sized slices, put in a container with a lid
    • Grind the garlic and add
    • Add spices and oil
    • Close lid and shake vigorously, let sit for 1h or more
  • Onions and ham
    • Cut onions into large chunks
    • Move potatoes from the container to parchment-lined baking trays, keeping the marinade
    • Add onions and ham to the marinade and shake, let sit
  • Roast!
    • Roast potatoes for 1h on 200° fan-forced
    • Remove from the oven and cover the potatoes with the onions and ham
    • Continue roasting for about 1h
