Pizza Crust
420g White/Bread Flour
200g Whole Wheat Flour
400g Warm Water (~110-130F)
16g Salt
2t Yeast
2t Olive Oil
Pinch of Sugar
Pour water and a good pinch of sugar into a bowl with the yeast. Let it disolve and bloom. Mix flours and salt in a pretty good sized bowl. Once yeast has bloomed, pour olive oil into it. Then mix with dry ingredients. Take out of bowl onto floured surface and knead for a few minutes until it feels smooth (add some flour as needed). Once smooth, form into a ball. Oil the big bowl you used for dry ingredients. Roll the ball in the bowl to cover with oil. Cover with damp cloth (use hot water). Sit in a warm corner until it doubles or so in size (~2 hours).
Punch down dough and cut into four even size pieces. Again, form into four balls. Put onto floured sheet, or parchment paper. Cover with hot, damp cloth (I usually put another piece of parchment paper under the towel). Let sit for another hour or so. When ready, form into rounds with your hands (don't need to do any fancy tossing in the air stuff). Plenty of videos showing how to do it. Place each round on a piece of parchment paper.
Toppings:
Carmalize onions and chopped thick-sliced bacon together.
Fry boneless chicken thighs in cast iron pan until they come to temp (I also seasoned them with Famous Dave's Rib Rub) and cut into bite sized pieces.
I used sweet city bbq sauce as a base (just like you would normally use pizza sauce)
Top with onion and bacon combo. Add chicken. Cover with provolone
Cook in a preheated 500 degree oven on a pizza stone. I just slide the parchment paper right onto the stone. Cook for 10-15 min depending on oven quality (watch closely after 10 min).
