- 1lb black beans
- 3-4 frozen chicken breasts
- 1T low sodium chicken soup base
- 2 bay leaves
- 3 6oz cans tomato paste
Spices:
- 2T onion powder
- 0.5T garlic powder
- 2T chili powder
- 1T oregano
- Soak the black beans in hot water overnight, or for at least six hours
- Drain and rinse the soaked beans until the water is clear enough
- Add spices and beans to crock pot
- Add 1L hot water to the crock pot
- Mix in the soup base
- Set crock pot on high for 45min or until boiling
- Set crock pot on low and let cook for 6+ hours
- Put frozen chicken breasts and bay leaves in a pot and add about 1 inch water. Bring to a boil, then turn to low. Cook for about 45 minutes. Make sure the pot does not dry out.
- Once chicken is tender, mash to separate the fibers and add to the crock pot
- Add the tomato paste to the pot and mix well. If necessary, add additional boiling water (up to 2 cups) and mix well.
- (Optional) set crock pot on high and let the ingredients come to a boil.
- Turn off crock pot and serve
