- 1 medium/large yellow onion
- 1 large/giant shallot
- 1 large idaho potato (yellow)
- 6 chicken thighs (bone-in, skin-on)
- paprika
- garlic salt
- pepper
- 1 cup rice (you pick the style)
- 15 oz dark red kidney beans
- slice of butter (for wok)
- soy sauce
- 1 quart chicken stock
- 1.5 cups water
- wok
- instant pot
- tongs
- chef knife
- instant pot rack
- large bowl
- fork
- soft spatula
- pour 1.5 cups water into your instant pot
- put the instant pot rack in the insant pot (duh)
- salt/pepper the skin-side of your chicken thighs
- heat wok to medium and throw slice of butter in
- throw all chicken skin-side down in wok
- salt/pepper/paprika up-facing side of chicken
- let chicken cook until brown/crispy bits start to form
- flip when you feel like it
- paprika the up-facing skin-side
- cook until you feel like it (but not through) (i'm not your boss)
- move chicken to instant pot with tongs leaving wok full of flavor
- close instant pot and set to 10m on poultry and start
- dice shallot and yellow onion and throw into wok
- put wok back on medium heat
- brown/fry/flip until cooked down a bit
- dice potato in the meantime
- soy sauce the wok like you're spray-painting the onions/shallots
- throw diced potato in and fry/flip until well mixed-in
- turn off heat when outside of potatoes are just a bit brown/coated
- rinse rice in large bowl at least 3 times or at least until water is mostly clear
- throw rice in wok
- when the instant pot is done, take out the chicken into large bowl
- dump wok into the instant pot
- get all that good deliciousness off and into the instant pot with the soft spatula
- grab thigh bones with tong and scrape all meat off with fork back into large bowl
- (if you can't get it all off maybe it's a nice snack for the chef)
- pulverize chicken meat with tongs until you like how it looks
- pour quart of chicken broth into instant pot
- open can of kidney beans and drain before dumping into instant pot
- dump chicken meat into instant pot
- mix that shit up!
- set instant pot to your type of rice and 20m
- (snack on that chicken meat)
