- salt (sprinkle sprinkle sprinkle)
- paprika (use from vessel... and dose to your taste)
- mixed pepper from grinder to taste (black pepper is fine but we use a blend of green/white/red/black)
- 2.5lbs chicken thighs (1.135kg)
- slice of butter (for the pan)
- 2 and 1/3 cup rice (1050g)
- 2 cups water (473g)
- frying pan (non-stick kinda helps)
- instant pot
- nonstick-friendly tongs
- plate or container (container with cover is nice)
- large bowl
- put the instant pot roasting rack in the instant pot
- pour the water in and forget about it for a little (leave it off)
- measure out ingredients and sprinkle salt and pepper on each side of chicken thighs
- melt butter in pan on medium/medium-high heat
- place thighs skin-side down in pan
- sprinkle paprika lightly over the thighs (who am I to judge how much is "lightly"? you figure it out)
- flip once browned up a bit (guess)
- sprinkle paprika lightly again (I am not shy with it)
- pick up with tongs and place on rack in instant pot
- repeat until finished with chicken (from "place thighs skin-side down in pan" step)
- pour leftovers from pan over chicken in instant pot
- scrape pan with nonstick-friendly tongs to get that good stuff and drop it over chicken
- sprinkle any leftover salt over chicken and add paprika/pepper as you want
- set instant pot to 14m on high (poultry setting if you have it)
- rinse your rice until the water is clear in large bowl (just do it)
- when instant pot beeps, let it sit for a bit and decompress (I am impatient too though and not your boss)
- move chicken to plate/container until after rice is done
- drop rice in and swirl instant pot inner pot to get it all level
- turn on instant pot with rice setting for 12m on high
- scoop out enough rice for the number of thighs you want to eat to sit nicely on top (I pat it down to ~1cm height)
- EAT!
- the more browning you get on the thighs without burning, the better
- season however you like and experiment
- do not use too little rice because the texture gets messed up
- try the recipe twice
- once to feel it out
- second time to make it exactly how you want
