- 1lb bone in chicken thighs (or more if you like) (optionally brine/marinade night before)
- enough pepper and chili powder to cover one side of each thigh
- extra virgin olive oil
- .5 lb crimini mushrooms (roughly diced)
- 2 large yellow onions (roughly diced)
- 1 large shallot (roughly diced)
- garlic (as much as you want)
- 1 large leek (chopped to 1/4 inch width)
- 3 celery sticks (chopped to 1/4 inch width)
- 3-4 yukon gold potatos (roughly diced)
- half green cabbage (roughly diced)
- 1.5 quarts chicken broth (or enough to submerge everything)
- heat pot with oil until starting to ripple
- place chicken skin down in oil
- spice the chicken with pepper and chili powder until lightly covered
- as chicken starts to look cooked on the edges, flip over each piece
- if the skin sticks, don't worry
- try to scrape pot a bit as it sticks
- remove chicken from pot and set aside
- chicken should be just cooked on the outside but if you use a fork be raw inside
- lightly try to scrape any really big and loose bits off the pot but leave anything currently stuck
- throw mushrooms in and add oil if needed
- throw onions in as mushrooms get very dark and soft
- consistently stir onions until soft and starting to brown
- make a space for shallot to hit pot directly and throw in
- spread shallot out and move onions/mushrooms over top of it
- make a space for garlic, let oil pool, and fry garlic for a short period
- mix all together
- make a space and throw in celery and leek
- move mushroom/onion/shallot/garlic over top of celery and leeks for a short period
- make space for potatos and throw in
- mix all together
- make space for cabbage and throw in
- mix all together
- pour half quart of chicken stock in
- make a space for each chicken thigh equidistantly space around outside of pot
- pour chicken stock in until level with top of veggies/chicken
- slow cook
- low simmer if on stovetop
- high slow cook in instant pot
I've been doing this recipe in different size instant pots. I like being able to saute first and then combine everything on the slow cook mode.
