- 2 large eggs
- 3 large yolks
- Enough water to get 185 grams total
- 300g pasta flour
- 1 tsp table salt
Mix the dry ingredients in a stand-up mixer. Add the wet ingredients and process until dough forms. Knead by hand for 12 minutes. Flour the dough, wrap in plastic and let rest 30 min to 5 hours at room temp.
Roll out first four times with setting 1, then two times in setting 2, two times setting 3 until reaching setting 6 that should be done only once.
