Pressure Cooker Pork Chop Casserole

Recipe: Pressure Cooker Pork Chop Casserole

Adapted from: http://amazingonepotmeals.com/pressure-cooker-pork-chops/

  • Serves 4
  • Time: (?) prep, 30 min cook, (?) total

Ingredients

  • 4 1-inch pork chops
  • 1/4 cup chicken stock
  • 4 medium potatoes, peeled and thinly sliced
  • 3 carrots, peeled and thinly sliced (added by Felix)
  • 1 onion, thinly sliced
  • 3/4 cup white wine
  • 1 finely crushed bay leaf
  • Garlic powder
  • Parsley

Steps

  1. Sprinkle pork chops with salt and pepper and sear in the pressure cooker in oil. Remove and keep warm.

  2. Deglaze the Cooker with chicken broth to loosen up all those delicious particles left from the pork chops.

  3. Place half of the potatoes and onions in the pot and sprinkle with salt, pepper, garlic powder and parsley.

  4. Place the pork chops on top of potatoes and onions and sprinkle with finely crushed bay leaf.

  5. Arrange the remaining potatoes and onions and again season with salt, pepper, garlic powder and parsley.

  6. Pour in wine or the same amount of chicken broth or water. If you aren’t opposed to wine it really is the ingredient that helps keep the pork chops tender and adds a ton of flavor to the meal.

  7. Seal the lid and bring up the pressure. Cook on high for 10 minutes. Cook on low for 20 minutes. Release the pressure and remove the lid.

  8. You’ll notice that there is seasoning placed between each layer. Do not skip this step as that is what adds flavor to this amazing one pot meal.
