Creamy Cajun Chicken

Ingredients | |
- Chicken Prep | |
- 0.8 kg chicken breast | |
- 4 tbsp. cajun seasoning | |
- 3 tbsp. coconut oil | |
- Sauce | |
- 2 tbsp. cajun seasoning | |
- 2 tsp. tapioca starch | |
- 1 can coconut milk | |
- Pasta | |
- Catelli Wheat-Free Pasta https://www.catelli.ca/en/brands/catelli-gluten-free/ | |
Instructions | |
1. Cover chicken in seasoning (place in container & shake) | |
2. Warm up cast-iron pan with coconut oil. | |
3. Sauté chicken in cast iron pan on medium for 10 minutes. | |
4. Simmer coconut milk, tapioca starch and 2 tbsp. cajun seasoning in a sauce pan for 10 minutes. | |
5. Combine chicken and sauce, remove from heat. | |
6. Cook pasta, drain, and combine with chicken. | |
