Cajun Pork Roast

Cajun Pork Roast

  • 2 lb boneless pork roast
  • canola oil
  • 3 T paprika
  • 1/2 t cayenne
  • 2 t oregano
  • 2 t thyme
  • 1/2 t salt
  • 1/2 t white pepper
  • 1/2 t cumin
  • 1/4 t nutmeg
  • 2 cloves garlic

Heat oven to 350.

Dry off the roast and put it in a small baking dish. Combine spices and garlic in the small bowl of a food processor with some canola oil; pulse until there's a paste. Use a spatula to spread the paste liberally all over the roast.

Put the roast in the oven, and check the temperature of the center of the roast after 50 minutes or so. When it's around 135, pull it out of the oven and cover with foil for a bit. If you like your pork more well-done, leave it in longer of course :)

Serve with polenta or potatoes or sweet potatoes or really whatever. A green veggie like peas or asparagus is good too.
