Preparation and bake time: 1hour 20minutes
For 6 people:
- 25cl of water
- 80 gr of butter
- 125 gr flour
- 4 eggs
- pinch of salt and pepper
- 150 gr of shredded gruyere
For 3 people:
- 18cl of water
- 60gr of butter
- 90gr of flour
- 2eggs
- pinch of salt and pepper
- 75 gr of shredded gruyere

Choux pastry: in a sauce pan, put the water, salt and butter at high heat. When melted turn the heat to the lowest and add all the flour. Mix vigorously with a wooden spoon until the dough does not stick on the spoon or the pan. Move the pan away from the heat and incorporate the eggs one by one, make sure to mix the dough with the wooden spoon in between. Add the shredded cheese.

Prepare the oven: use middle rack ; pre-heat at high heat.

Slightly grease a cookie sheet or use parchment paper. Using a big spoon or an ice cream scoop to dispose the dough into small piles on the rack. Bake for about 30minutes. The crust should feel firm when pressing with a finger. Serve them either very hot or cold.
