1/2 c butter
1 1/4 lb grated sweet potato
2 1/2 T packed brown sugar
1/4 t salt
1/4 c tequila
juice of 2 limes
In a cast iron skillet:
* melt butter
* stir in sweet potatoes, pat into even layer
* sprinkle in brown sugar & salt
Transfer to a smoker, smoke for 1 hour (200-220*F)
Stir in 3 T of tequila & half the lime juice, pat back down
Smoke another 50 - 60 until tender but crisp around edges
Remove from smoker and stir in remaining tequila and lime juice.
