Chestnut Soup Recipe
2lbs chestnuts
2oz butter
1onion chopped
4 rashers streaky bacon
2 carrots chopped
2 sticks celery chopped
1 bunch water cress
1/2 pint stock
1 pint milk
1/4 pint single cream
salt and pepper
croutons
melt butter fry onion for five minutes , do not brown.
dice bacon add to pan cook 2 mins.
stir in chopped carrots and celery, chestnuts, watercress,stock , milk and seasoning .bring to boil, cover with pan lid.
simmer for 40mins.liquidise when heating up for meal stir in cream. do not boil.
