Install protobuf 3.6.1 on Ubuntu 16.04
#! /bin/bash
# Make sure you grab the latest version
curl -OL https://github.com/google/protobuf/releases/download/v3.6.1/protoc-3.6.1-linux-x86_64.zip
https://github.com/google/protobuf/releases/download/v3.6.1/protoc-3.6.1-linux-x86_64.zip
# Unzip
unzip protoc-3.6.1-linux-x86_64.zip -d protoc3
# Move protoc to /usr/local/bin/
sudo mv protoc3/bin/* /usr/local/bin/
# Move protoc3/include to /usr/local/include/
sudo mv protoc3/include/* /usr/local/include/
# Optional: change owner
sudo chown $USER /usr/local/bin/protoc
sudo chown -R $USER /usr/local/include/google

I have followed the above steps to upgrade from older version of protoc to 3+. still I get protoc --version as "libprotoc 2.6.1".

Just consolidated the whole process by considering other comments

#! /bin/bash

# Unzip
unzip protoc-3.6.1-linux-x86_64.zip -d protoc3

# Move protoc to /usr/local/bin/
sudo cp -r protoc3/bin/* /usr/local/bin/

# Move protoc3/include to /usr/local/include/
sudo cp -r protoc3/include/* /usr/local/include/

# Optional: change owner
sudo chown $USER /usr/local/bin/protoc
sudo chown -R $USER /usr/local/include/google

sudo ldconfig
