Hide Application from Dock:
defaults write /Applications/Application.app/Contents/Info LSUIElement 1
Show Application in Dock:
defaults write /Applications/Application.app/Contents/Info LSUIElement 0

Just used this to hide “ScanSnap Manager.app” from my Dock – I want to have it running all the time, but in the background. The Dock icon got on my nerves ;-)

@schrader - how does it interact with whatever application you're using for OCR? Does that still come up when you press the button on your scanner to scan the doc?
